On with the post though...First up, bottling. This was actually a very simple process and is easily demonstrated in this short video I made. There is no requirement for priming sugar as there is still plenty of residual sugar for the yeast to get through. Furthermore, I opted to use some of the empty glass bottles I have instead of plastic as the instructions suggested.
* Additional note - It appears the Kombucha continues to carbonate as it undergoes the secondary fermentation and three weeks later I had some seriously over-carbonated brews. I guess that would be half the reason the instructions suggest to use plastic bottles with a balloon as a lid to avoid the pressure building up to much. Unfortunately, I had to set what I had left free as I was not going to go through it within the next day. So we poured ourselves another sample as we saluted the final few bottles.
At the very least, get yourself a kit (support local!) and give it a shot. I still want to see someone make a crazy beer-bucha hybrid called Frankenbucha...Patents Pending!!! If you do make something, let me know how it goes, I would love to taste it or at least see how it comes out if done correctly!
As always, have fun!
